Pinchos

Ingredients

  • 2 or 3 large Chicken breasts

  • 2-3 tablespoons of HOMEMADE LATIN SEASONING

  • 2 Tablespoons of Olive Oil

  • Bamboo skewers

Directions

  • Soak bamboo skewers in water til ready to thread chicken (soaking will help avoid burning bamboo sticks)
    Cut Chicken into cubes and place in a food grade plastic bag with Olive Oil and HOMEMADE LATIN SEASONING, make sure to coat every piece of chicken. Marinate for a few hours. Thread onto skewers.
     
    Heat over 350 degrees.
     
    On a baking sheet with a baking rack, place skewers and bake for 15 minutes. Flip skewers over, and bake for another 10 minutes. 
     
    Coat chicken on both sides with barbecue sauce (my favorite is Sweet Baby Ray’s). Raise oven to 425 and bake 5 minutes on each side.
